The Maison Trogneux has been an institution in the city of Amiens since 1872. Jean-Baptiste is the sixth generation to perpetuate the tradition of making the Macaron d'Amiens. This delicious specialty from the Picardy region dates back to the 16th century. Its recipe, introduced from Italy by Catherine de Medici, is very simple: Valencias almonds, sugar, honey, egg white, a little sweet almond oil and bitter almonds, all without preservatives or coloring. .... and a real "knack".
