- Saffron in pistils
It is at the top of the Somme Valley, between Le Hamel and Cerisy, that Anaïs Moineau has set up her saffron farm overlooking one of the most beautiful landscapes in the department. This very young saffron plantation will develop over several years in order to produce its precious blood-red pistil flowers over a period of about one month. Several tens of thousands of flowers will have to be harvested by hand to produce "red gold". This exceptional spice which, in the collective imagination, evokes the East and the sun, has its place in our beautiful region. The crocus, the flower from which Saffron is made, offers us magnificent coloured fields and gives our dishes flavour and colour.
Anaïs also uses it in several preparations that she invites you to discover!
